YUMMY!



This is from a pasta recipe book that my brother Wade gave to my sister Brooke for Christmas years ago. Their plan was to make one of the recipes from the book each week. This happened to be the first one... and they loved it so much they never moved on :) Its called Bacon Linguine but is quickly becoming known as "Bolli Pasta."

Its super easy and pretty amazing!

Ingredients:
1 lb package linguine
I lb bacon (the recipe book calls for 6 slices but we add more)
4 TB olive oil
1 onioncut into quarters and sliced into slivered pieces
1 clove garlic, chopped
1/4 c chopped black olives (we often use more)
salt and pepper to taste
parmesan cheese


Directions:
Cook linguine noodles al dente,according to manufacturer's directions (about 9 minutes).

While noodles cook prepare the following:

Cut bacon into 1/2 inch pieces. In skillet cook bacon until not quite crispy. Drain off most of grease.
Add olive oil, heat over medium heat.
Add onion. Cook until edges turn golden.
Add garlic and cook for about 2 minutes.
Add olives and cook until warmed through.

Add bacon mixture to drained linguine noodles. Mix, adding salt and pepper to taste. Sprinkle with parmesan cheese and serve.


Number Of Servings:4-6

Preparation Time:20 minutes

Busy week....

I got a little car sick on the way there... but once we arrived we had a nice time.

I was taking this picture of Chris by the Indian as a joke... when some man walked by and asked if we both wanted to. So I said sure and jumped in. Later on I was looking through the pictures and noticed he chopped the Indians head off... which was the whole point of the picture :)
Here are Chris and I in front of the cute little catholic church. It was really pretty. We were killing time before the Ghost tour.... that was lame and not scary at all.
We headed straight from Eureka Springs to go camping at Ft. Gibson with some friends. The pictures didn't really turn out well. The last night we were there I was running to the bathrooms and tripped over our own tent. It hurt pretty bad. Kind of like someone punched me in the stomach... and I have a pretty sweet scab on my knee.
We headed home Wednesday and got home just in time for me to unpack, shower, and head to work. Thanks for the fun weekend babe!

Happy Birthday to me....

My birthday isn't really until Sunday... but we started off the festivities last night with a little margarita party and some rock band.


Here is Chris and some of his buddies from high school rockin' out. Chris is wearing the Nacho Libre mask we got for his brother in Mexico that we still haven't remembered to give to him. We are making good use of it in the mean time.

My friend Kristen's mom has her own little cake making company. I forgot to take a picture before we all dug in. It was very cute though. It was delicious and a very nice surprise!

I woke up this morning to my favorite Swedish pancakes with whipped cream and strawberries. Oh and a little turkey bacon on the side.
We are leaving early in the morning to Stay the night in Eureka Springs before we go camping for a few days. It was very sweet of Chris to make me breakfast. Thanks babe!

FIRE IN THE HOLE!


Ours friends we went to for the 4th made a cannon. It seriously shook the ground... and house every time it went off. They were packing it w/ 8x the amount of gun powder used for a gun.
Chris wanted me to record it once... you will be able to get a little taste of how loud it really was. It caught me off guard a little.

We found some mud!



We took the jeep out with Jared and Kristen yesterday.


Jared only got stuck once :) Chris used the wench to get him out... and then broke it later trying to pull a tree out of the ground.






We had a really good time. Its nice to have someone to take the jeep out with!

rough waters...

Chris and I decided that our big thing we were going to do in Mexico was to go parasailing.... Everyone else ended up wanting to go as well. It was so much fun. Not something I would ever do again but I am very glad we did it.








My mom took the older nieces for the their upcoming birthday presents. Layne (6), Carter (6), Tara (8) and Chayce (8) all went to. I was pretty impressed!

As you know... I tend to have a little case of motion sickness. All was good until I was 900 ft in the air... A few others said they felt a little queezy too.

HOLA!






We had the best time in Mexico with my side of the family. Everyone but my dad and niece Chenae were able to make it. It was so fun to see everyone again.

On out way into town Friday to go parasailing we got stopped by armed guards-- carrying machine guns. As we were standing outside the vehicles so they could search for drugs some more guards pulled up in hummers... it was a little scary.

Hopefully we can go back soon!
